Strawberry-Chia Kefir Pudding

The 1-hour refrigeration gives the chia seeds time to expand and gel, giving this a pudding-like texture. Feel free to swap in a different milk kefir if you are sensitive to cow’s milk.

Strawberry-Chia Kefir Pudding

(Makes 1 serving)
Prep time: 5 minutes
Cook time: 1 hour, 5 minutes

Ingredients:

  • 1/3 cup sliced strawberries

  • 1 cup plain whole-milk kefir

  • 1 teaspoon chia seeds

  • mixed berries for serving (optional)

Directions:

1. In a small bowl, mash the strawberries with a fork.

2. Add the kefir and chia seeds, stirring to combine. Cover and refrigerate for 1 hour or more before serving.
