Fajitas are a great meal to order when eating out as you can mix and match a variety of ingredients (protein, vegetables, beans, guacamole, rice, etc.) in the portions that are right for you, whether you are eating a lower or higher carb diet. This recipe takes that same concept and gears it towards fat loss, but in your own kitchen. If you are in a pinch for time most of these ingredients can be purchased, prepped, and ready (pre-sliced peppers, pre-cooked shrimp, etc.), so all you need to do is sauté and eat!

  • 1 teaspoon peanut oil

  • 1/2 pound raw shrimp, shelled and deveined

  • 1/2 cup salsa

  • 1 medium green bell pepper, sliced

  • 1 small onion, sliced

  • 3/4 cup canned low-sodium black beans, rinsed

  • 1/2 teaspoon chili powder

  • 1/2 teaspoon garlic powder

  • 1/2 teaspoon paprika

  • 4 Tablespoon shredded reduced-fat Colby Jack cheese

  • 1/2 avocado, diced


1. Please the oil and shrimp in a nonstick pan over medium-high heat and cook until the shrimp is warmed.

2. Add the salsa, bell pepper, onion, beans, and spices. Reduce to medium heat and stir occasionally until the shrimp is cooked all the way through.

3. Remove from the heat and place in a bowl. Top with the cheese and avocado, and enjoy.
