Ginger-Peach Pudding Parfait
(Makes 2 servings)
1 cup unsweetened almond milk
1 scoop vanilla Perfect Fit protein powder
3 Tablespoons chia seeds
1 teaspoon grated fresh ginger
1 cup diced peaches (preferably fresh, if they’re in season; otherwise use organic canned peaches without sugar added, drained, or organic frozen peaches)
1/2 cup your favorite granola (stick with all-natural, low-sugar varieties)
1/4 cup unsweetened shredded coconut
1. In a blender or shaker bottle, combine the almond milk with the protein powder until smooth. Mix in the chia seeds and ginger and place in the refrigerator overnight.
2. In the morning, layer the chia pudding with peaches, granola, and coconut.
