Homemade Chili Seasoning
“The spice mix is the cornerstone of any good chili recipe,” says Karmel. “Make sure it’s balanced with sweet, savory, spicy, and bitter.” Sure, you can always buy a premixed packaged chili seasoning, but your own blend will unlock more robust flavors. The combo at right is Karmel’s go-to mix. Tweak the recipe so it’s uniquely yours; just go light on the powdered spicy peppers, which can quickly over- whelm subtler flavorings. You won’t use the entire 2⁄3 cup this recipe makes, but any leftover mix will keep in your pantry for up to six months. It also works well as a rub for meat.
